This month, La Gourmet Box headed to Lorraine to discover the mouth-watering delights of the département of Meurthe et Moselle. We naturally set our sights on Mirabelle plums, Bergamot oranges and “grey” wines, but you’ll also find plenty of other delicious surprises made by enthusiastic artisans. Mystic Gris "grey wine", AOC Côtes de Toul 2020 (75cl)

Côtes de Toul really is heaven for fans of rosé, especially the “grey” variety: we were pleasantly surprised by this wine, which has the salmon tinge of a rosé shot through with hints of grey—hence the name gris—owing to the use of dark-skinned grape varieties (Pinot Noir and Gamay, in this case) in Toul’s famous vin gris. The must or grape juice has very little contact with the skins, which explains the light colour of grey wine.

In 2006, Thomas and Rémy took over the winery where they had previously been employed in the vineyards—the only one inside the city of Toul that makes Côtes de Toul wine—and now offer us this delightful Gris de Toul, distinguished with several stars in the Guide Hachette des Vins.

Traditional Lorraine pâté with essence of Bergamot orange (180 g)

The Bergamot orange is a citrus fruit imported from Italy, a cross between bitter orange and lime. It was brought to this region by René II, Duke of Lorraine and King of Sicily in the Middle Ages. The natural essence extracted from the peel is far more aromatic than the juice, and nowadays it’s all the rage in Lorraine, used in everything from perfumes to teas and gourmet foods like this artisanal pâté.

Our artisans do things the all-natural way, with the utmost respect for the environment. That’s why their pigs are fed with grain grown on their own farm, to which they add flax, and why they’ve been GMO-free Bleu Blanc Coeur certified since 2009 and additive-free (E250) since 2017. And the flavour and consistency are simply unbeatable!

 
Farmhouse pork pâté delicately flavoured with Côtes de Toul grey wine (150 g)

We chose this artisanal breeder/processor for their commendable methods and, obviously, the taste of their creations. The animals they use to prepare their recipes are raised on the farm and fed grain and fodder from their own land to ensure their wellbeing.

We think you’ll love this pâté with the light pink colour of Toul’s grey rosé wine.

 
Veal sauté stewed in Mirabelle plums from Lorraine (400 g)

Serious foodies know that the taste of meat depends on what the animal eats. If it’s raised in a natural, stress-free environment, its meat will be savoury, tender and rich in nutrients.

Our artisans prize this Goût des Prés or “meadow flavour”, which you can taste in every bite of their delicious farm-raised veal, slowly stewed with Lorraine’s inimitable Mirabelle plums.

Lorraine’s Mirabelle plums are excellent as fruit, but they’re also quite delectable as eau-de-vie with babas made by a skilled artisan. According to legend, the Polish King Stanislaw, who ruled Lorraine from 1737 to 1766, was responsible for the invention of this delicious dessert. While exiled in Alsace, he became fond of Gugelhupf, but as he grew older, he found the cake increasingly heavy and dry.

He ordered his pastry chef to give this tasty Alsatian sweet a new twist, and so the famous rum baba was born. Let us know you think!

 
Crunchy mini meringues with a bittersweet fruity flavour and a hint of Bergamot orange (50 g)

The small, square, sun-kissed candies known as Bergamotes de Lorraine have been delighting gourmet taste buds for over a century and a half. The process of creating these sugary morsels flavoured with Bergamot oranges is both simple and complex: it requires premium essence of Bergamot orange, a very precise temperature and, above all, a dry, healthy environment.

And our absolutely adorable artisans have mastered every step to achieve perfection. It’s amazing how a simple lump of sugar can give so much pleasure!
